There is a bug in singleplayer that resources that were harvested and didn't respawn before you log off take a long ass time to respawn. During my Lost Island playthrough, some metal nodes respawned after ~40 hrs and after I farmed them again they didn't respawn till the end, so more than 100 hrs of waiting time.
