Wheel Damper = 2.0. Mechanical Trail = 1.0. FFB Min. Force= 1.5. Road Feel = 0.2. Off Road Feel = 0.5. Sensitivity = 0.7. All the other settings I left at default. This setup gave me a heavy feeling setup but with good control for most of my cars. road feel is there, but does not jerk the wheel out of your hand.

Forza settings (advanced controls - only listing the ones I think I changed): Steering, acceleration, deceleration deadzones - 0 and 100 (have noticed these reset to 5/95 after restarting game, will have to keep an eye on these) Force feedback scale - 80. Road feel scale - 65. Load sensitivity - 35.
I’ve got both traction and stability control enabled. I'd say disable the assists and dial in a custom tune yourself. Try a FWD car and see if the same thing happens. Oversteer should be a car issue, not your steering wheel. It's pretty easy to fix with race sway bars and adjustable suspension.
