The only big difference I can see between the S and S+ is the chamber. As far as sound, the S+ definitely has more body in the tone to my ears, mainly in the upper range and altissimo. To me the first modern sax would be the Selmer Mark 6/ Balanced Action (pretty much all modern saxophones are copies of either this or copies of Selmer's own Mark 6 copy, the Super Action 80).

I do not think you are an idiot, especially since you evidently appreciate black lacquer. But I'm puzzled by the enthusiasm for copies of old mouthpieces. There is a seemingly endless variety of new, high-quality, expertly manufactured mouthpieces from which to choose.It is a transitional model from 1932 but has all features of the 6M. So no split bell keys. I never took a sax on a plane, so I am looking for some recommendations from experienced players that play a similar sax and have found a case that works well in practice. Budget-wise, I would be willing to spend up to $300-400.
